we all strive for perfection & sometimes overanalyze a cook so i thought this may be handy... thomas a. edison once said when asked about the lightbulb...... "i figured out 1 way to do it & 2000 ways NOT to do it" - so if ya ever get frustrated or discouraged just remember -don't give up... after all it's only wood, heat, & meat..... add in big ol' dash of patience & it'll all work out in the end.

The process is the fun part, the end results is just the icing on the cake.
I did a pork loin took alll that time baby the coals to get the thin blue smoke looked great and had a fun time doing it but when it was done and came to the taste test man I Blew it too much rub it overpowered the pork. Sometimes you learn more from your failures than your successes
