We have a few right in the pond across the street from us in the resort.

Looks like a duck or fish he eating.

I used to hunt gators.
Best way i found to prep the meat was was to grind it. Mix it with pork or poultry. Burgers, taccos, meatballs, ...

Gator hunting days predated my sausage making days. Thats how i'd prep the meat now.
 
I soak the gator (nuggets, fillets) in buttermilk over night. I ground it and made gator sausage.
