Doing a rack of spares today along w/ a chuck and some beans. Smoking at 230* or so w/ chunks of pecans. Here are some pics so far:

About an hour n' half in:


Will post some finishing pics later. Doing a no foil smoke; will keep these on for about 7 hours and will sauce on the last hour.
 
Looks like it's going to be a tastey meal right there !!!

I read about the cork from someone on here. I decided to try it out. I normally use a half of a lime or lemon and that seems to work ok.

The little guy is at the busy age, fun but keeps you on your toes, a man on a mission!!

Lookin like a great start! I have been tempted to add a propane Smoke Vault to the arsenal. Also I like your no foil idea. I am starting to want to try to experiment without using foil. Make sure you keep us posted!

Yes indeededy you will be eating well tonight. I like the ribs and you have to just love those Vaults 24". And you little helper is gonna be up and helping with the low stuff really soon too.
