I have not put water in my MES water pans in 8 years.

Thanks Bear. I thought that might be the case -,keeping the direct heat from the sausage and spreading it around. Will do as you suggested. Thanks.As for the water pan, I don't know if I have an actual Step by Step on that, but I've mentioned many times that I cover the water pan with Foil, and put it in place in my smoker. This keeps some of the direct heat away from the meat above, and makes it easier to keep clean, changing the foil only when it gets real bad.
