I started with just a little dude, rubbed him up with some good ole "Butt Rub" and extra garlic, salt, and a touch of light brown sugar.

Used my DG offset that was set up for a "minion burn." First fuel load lasted over 4 hours using bulk charcoal and hickory chunks. Had a fairly clean burn!

My temperature stayed steady at 220 for nearly the first four hours. Overall, temp fluctuation was never more than 15 degrees.



I hit a stall about 9 hours in. My IT stayed steady at 169 for over two hours.

Please feel free to share any tips on how to move out of a stall without wrapping...please!

In the end, it pulled very nicely, was nice and moist, and really had a great flavor. I figured about a 10 hour cook that ended up running over 13, but the results are what matters.

I'm always open to critique and happy to learn.

Looks really good from my screen. To pressure thru the stall without wrapping crank the heat up. Butts can be smoked anywhere from 225 to 275*(some folks go up to 300*) w/o loosing any flavor or texture.

Point for sure.

Thank you sir. I got it up to 240 for a bit, but patience turned out to be useful this time. I appreciate the feedback very much.
 
I usually smoke my butts at 270-280.
At those temps you hardly ever get a stall & they only take about 1 hour per pound to cook.
Still plenty tender & juicy without wrapping!
