I thought this was kinda helpful and hope maybe it will help some others, also. It covers which fish are considered fatty and lean, has flavor profiles, gives cooking suggestions and some even have substitutions.

Though it doesn't cover ALL the types of fish in the world, it does cover those found here in the states.

Good post.

Fishing season is just starting here.Can't wait to put some fresh goodies on the smoker,actually heading out in a bit to hopefully do just that!
