Had a friend's family over today for a BBQ, a few racks between friends makes for a good time.
This was Pork Ribs 101 for my friend who has never smoked anything and wants to start.
So we both went in on some racks of St. Louis and he spent the day hands on in the kitchen.
He really was surprised that it is as easy as it is, rub some meat, get a good temp/smoke and watch some football.
We went over rubs, sauces, cuts of ribs, cooking methods, Memphis vs Kansas City, types of smokers, woods and everything... You name it, he had more questions than a curious five year'ol, which is great.
I give him a little while and he'll have a smoker and be cranking it out himself.

We fired up the smoker with Cherry, dialed it in to 225°-250°.
Rubbed the racks with three different rubs and laid'em down.
No spritzing/mopping, no wrapping. We did use a water tray.
Two racks got glazed with some SBR.
These were some meaty racks and it was a 7.5 hour cook.
Pop, Bend and Crack tests yielded a nice light tug doneness.
