A Dead Commercial Freezer For A Smokehouse ?? (need quick answers)

So I found this commercial freezer locally.... https://www.govdeals.com/index.cfm?fa=Main.Item&itemid=639&acctid=2709 , on the Government Auction Website... Was wondering If anybody had any insight/thoughts on making this into a "180` max" smokehouse the way it sits.... Obviously I will be using my electric heat element controlled by my PID controller ... Put some vents in it ... ??

I don't know what the interior consist of so my question is assuming it's a metal interior .... Do you think the rubber weatherstripping on the doors would hold up to a low heat of the degrees ??
 
Not sure about that one but this one has held up to higher temps

the few fridge builds I have seen didn't have vents, a hot plate with a cast iron skillet with wood chips or chunks in it, not sure on the insulation, the gaskets will probably be ok but the only way to know is to try it. I only worry about the insulation breaking down and gassing off ugly stuff, the yoder loop in the cabinet can get pretty hot but havent never checked how hot, I would guess around 120, good luck
