I'm using apple cider vinegar and apple juice in my brine, going to use apple wood while I smoke, will putting apples in the cavity while I smoke it add flavor to the bird too

I am thinking of using apple smoking chips myself. Sounds like a great idea, go with it.
 
Creswell, as long as the IT of the Breast gets from 40* to 140* in 4hrs.  You will no doubt cook at 275* to 300* , so reaching temp. should not be a worry. The 'Brine' , with Apple juice , (IMHO) should have equal amts. of Salt and Sugar to promote 'Osmosis'.  I recommend the Slauterhouse Brine , a 'no fail' formula that can be ammended (ie Apple juice).

The Apple wood would be a great smoke...
