7 Pepper Sticks

Another Owens BBQ Stick mix in the making. T

his is their 7 pepper mix. Really good.

Stuffed into sheep casings. This is 2.5 pounds with 7 T 7peppr mix and 1/2 tsp cure 1, 3 T distilled water


Hanging and tied in the smoker. Temp at 130*,  Going to roll hickory in about 2 hours using the Amazen tube smoker.

 
 
I have to order this mix now.  I keep hearing about it and y'all have me curious!
I used to use many pre mixes like LEM, PS, High Country.

Now i stay with Owens, AC and Townsend.

High Country is not HM.
 
 
You do a lot of different sausages, it would seem. Just curious - why do you buy pre-made mixes instead of making your own?
Because i am a full time RVr in a 40' 5th wheel. Pre made mixes are much easier for me to store instead of the 7 large plastic bins i had full of bulk dry items.

Nepas the sticks look like they will be great!

I've had great experience with almost all of the LEM's Backwoods seasonings I have tried.  In all I've tried 8 sausage seasonings, 2 snack stick seasonings, 1 bacon seasoning, and 5 jerky seasonings (poor experiences were bland regular breakfast sausage, and summer sausage that tasted like corned beef logs rather than summer sausage). 

The LEMs Franks seasoning and the Fresh Bratwurst seasoning make the best Franks and Brats I have ever eaten hands down.  I have never been impressed with Franks and Brats and I have tried them in other countries, various German restaurants in US and abroad, and US states of Wisconsin and Minnesota where they take sausage seriously.  I don't run across many franks and brats made here in TX, we have a bunch of other sausage where my all time favorite is proper country style Czech Klobase (not to be confused with Kilbasa)

I am only looking to switch from LEMs to avoid some of the less desirable ingredients like MSG.  If my sister in law eats any MSG she gets an instant migraine.  I would like to share the food with all of my family as well as eliminate problematic or bad ingredients when I can :)

Try Owens mixes.
 
These are done and in the fridge.

Cut and vac sealed in couple days.

I'm whooped, Going to Universal tomorrow.
