4th ribs! (And a festive dessert)

Made a nice rack of baby back ribs for the fourth! Last time I did them I did the 3-2-1 method which worked well, but this time I thought I'd try something a little less hands on! I followed this recipe for naked ribs (thanks Al!!)

They turned out great and juicy and smokey. I used a blend of hickory and apple and the flavor was great! Ate them plain with some smoked spicy sweet potato gratin and green beans, all around a great 4th meal!

And you can't have a 4th of July without burgers! These of course are cake, but it still works!

It went against all my instincts not to rub these down, but it turned out good! Next time I'll probably do a simple salt pepper garlic and onion just to add a little, but it really didn't need much!

Cakes are my day job, so I don't make them too often at home, but these were too cute!

Like you, I was afraid to go with just SPOG. I did 2 racks with just SPOG and 1 rack with store bought bourbon rub for the 4th and both were great, but the simple SPOG ribs were hard to stop eating. The natural meat and smoke flavors are more pronounced. I even used the same wood blend you picked...lol.

The cakes look great too! Is the "burger" part made of chocolate cake?

How'd were the potatoes being smoked? I've wondered how smoked sweet potatoes would turn out.

I was really happy with the simple ribs, will definitely do them again.

The middle of the burger cupcakes were brownies!

I’ve made the sweet potato gratin in the oven before, but I think the smoke gave it a nice extra layer of flavor for sure. The potatoes were sliced thin so they cooked up nice and fast in the last hour I had the ribs on. An easy side dish since I already had the charcoal burning!
