Hello all!

wife wanted ribs for the 4th, so I decided to post the cook here.

picked up a 3pack of baby back ribs from Sam's Club.

removed membrane

rubbed with olive oil and McCormick's "Applewood Rub"

wrapped in glad wrap and started my UDS.

used Kingsford "blue" with apple wood chunks.

got my UDS temp to 225 with heat deflector and small water pan.

placed ribs on smoker at 1pm, closed the lid, and maintained 210-240

checked at 5pm (4 hours) with toothpick, spritzed with apple cider vinegar, closed lid.

NO WRAP

removed ribs at 6:30pm (5.5 hours)

tented with foil for 1 hour.

served with potato salad and bbq sauce.

turned out much better than I had hoped for.

next up, pork butt.

I will throw in my 2cents.. True smoking. Meat , heat , time, low and slow. Beautiful product!! Great smoker!

thank you all!

I picked up the smoker from a local builder out of Conroe.

Charlie did a great job on my custom build.

I've added a 2nd ball valve to help regulate temps a little better.
