Happy birthday, America!
Overnight pork shoulder. Meat Church Honey Hog and Holy Gospel. Mulberry wood. 12lb shoulder took 8.5 hours at 275°. Rested in a 170° oven for an hour. Shook some more Honey Hog and Gospel into the meat when I was shredding it for just a little extra pop of flavor.

Looks great. Watched a video for brisket with the meat church dude, seems like a great guy
