4th appetizer ideas wanted?

July 4th is coming up, and since I have owned a MES 40 for past 6 years, I am the designated cook/pitmaster, for our 4th family get together.  I always do BB ribs, both wet & dry, sometimes will do some spares st louis trimmed, and usually chicken thighs and some breasts.  Usually we have 30-50 people. 

I am looking for appetizer ideas.  I usually do two or three, this year I want to do three.  ABTs are out done them enough.

*I'm trying to keep it to only one that is cooked on site, the other two will be prepared in advance...

One will be a smoked then grilled sausage,  I would appreciate some dip sauce ideas for this.

Cold no meat appetizer.

Can be meat/seafood prepared in advance.

If you have recipes I would appreciate the recipe or a link to that recipe or what inspired it.
 
These are usually served hot but they may be ok cold. Or do ahead and reheat in a 300*F oven 15-20 mins until hot...JJ

Curried Veggie Shots

3Lb Yukon Gold Potatoes, peeled and Boiled

3ea Eggs, beaten

1/4Cup Heavy Cream

4T Butter

1T Minced Garlic

1T Minced Ginger

1/2C Diced Onion

2T Madras Curry Powder or McCormicks

1T Kosher Salt

1tsp Black Pepper

Sriracha Hot Sauce or other to taste

2C Frozen Mixed Vegetables (Peas, Carrots, Corn, Baby Lima) Cooked until tender.

1- 14oz Can Chickpeas, drained

1C Chopped Scallions

1/2C Chopped Cilantro ( optional )

Flour, Egg and Bread Crumbs as needed.

Melt the butter and Saute the Garlic, Onion and Ginger until tender, add the Curry and saute 1-2 minutes to bring out flavor.

Add the Vegetables and Chickpeas saute until tender.

Mash the potatoes with the eggs, cream, salt, pepper and Hot sauce, until smooth but firm, adding additional cream if too dry.

Fold in the vegetables, Scallions and Cilantro until well combined.

Form desired size balls and roll in flour, egg then bread crumbs.

Refrigerate until needed or at least 1 hour to firm.

Deep Fry in 350*F oil until Golden brown...

Cucumber Raita Dipping sauce

2 Hot House/English Cucumbers, Peeled and Grated, water squeezed out.

4C Plain Greek Yogurt

2T Lemon Juice

1/4C Fresh Chopped Mint

1tsp Sugar

1tsp Salt

1/2tsp Black Pepper

Stir all together until well combined.

Refrigerate 4 or more hours for flavors to develope.

I posted a Fresh Salsa recipe this week.  It's really good...and good on the top of meats too.  Just gotta have some tortilla chips and there ya go with it.  It's in the recipe section and is "Kat's Blue Ribbon Fresh Salsa" (yup---got a blue ribbon the 1st time I ever made it!)
 
Dennis one thing I like to do for a app is to make my version of Dutch's beans and put Scoop chips next to them so its like a bean dip.

Pig candy could be a good app to do. I haven't done those in a long while. Smoked Deviled eggs?
