cooked a 4lb butt that went 11 hrs. what a wierd piece of meat.i was planning for it to be done at 12, i figured 6-7 hour cooking time would get me close. . it was delicious, my wife said one of the best i have done. today I have learned that approximate cooking time means nothing. i pulled and rested it at 6:30pm.
 
I always plan on 1 1/2 to 2 hours per pound, whether bone in butt of brisket, to reach the 195/200 internal temp. If it finishes early, there is always beer. If it finishes late, there is always beer. Regardless of when it finishes, I double wrap in heavy foil, wrap in a heavy beach towels and toss in a cooler for a couple of hours. And yes, there is always beer.

this lilttle bugger stalled forever. i was planning on taking it to a picnic today. i figured i could finish it in the oven at their place(5 mins. away from my house) for a couple hours if needed. well, i brought it home and pulled it. eating it right now actually.
 
Stalls happen. Fact of life. Cannot do anything about it. That is why there is beer.
