had a great 4 Th. thought i would throw up a couple pics of the results, 8 pound brisket,medium coat of salt,pepper and garlic. smoked on my new braunfels offset. mix of lump and briquettes and used about  twenty fist size chunks of mesquite. 11hrs. at 225 ish, 3 hrs. rapped and in the cooler. loved the depth of smoke.



 
Hello dw.  I'm from Mathis but now living in England.  Glad to see well cooked properly smoked Texas style sliced brisket. Looks like we had good weather back home.  Glad your 4th went well.  Any luck on finding a fridge?  Keep Smokin!

KC,it's been great weather. As for the frig,I'm being patient. I want one that has that cool nostalgic look.I did do a stainless steel dishwasher jerky conversion.
 
PG_ the burnt ends went into a pot of pinto beans I made last night. Nothin better.
