I have never shredded pulled pork. I didn't know I was supposed to. I cut it in little chunks. Then I fry onions in lard, throw the meat in, brown it with the onions, and stir it all up with sauce and celery seed. Then I toss in bourbon or JD, light it, let it go out, and stir it some more.
What...that is why its called pulled pork. Pretty sure on that.

There is a difference in every muscle fiber being pulled apart, doing a rough chunky chop, or that kind of "chopped pork"

EWWW. Might as well make the thing in a crock pot then! :emoji_laughing:

Oh, boy. I didn't expect the barbecue inquisition. Next, I'll have to face the comfy chair!

Where are the smoke and bark in a crock pot?

When you shred it, you lose all the texture and end up with something unrecognizable, and when the sauce goes on, it might as well have come from a can, so why not fry chunks with onions before mixing the sauce in? It was delicious.

This was from a butt I smoked before I got the WSM, and it wasn't haute cuisine to begin with, so I turned it into something suitable for sandwiches. If I had a perfect butt I had just smoked, I would pull it and mash it enough to open it up, but I wouldn't turn it into shreds that don't look like meat any more. That's too close to SOS.

Well, this is interesting.

I was wondering why anyone would be upset about what I did, so I looked up "pulled pork."

Years ago, I looked it up, and I read that it was called pulled pork because the meat was pulled off the bone, not sliced off. Sounded reasonable to me, so that's what I have believed since then.

Today I checked again, and I read that before people called it "pulled," they called it things like "shredded" or "torn" or "forked," and the idea was that the meat was "tender enough to be pulled or shredded apart by hand or with forks."

So is that have to be "shredded," or do chunks count? I don't know. I just read: "The action that defines it is tearing the finished meat into strands or chunks."

Yesterday or the day before, I saw a photo of what someone thought was pulled pork, and it looked like someone had given Carrot Top a crew cut and tossed the hairs in a bowl. Didn't appeal to me at all. I like to have some chunks in there.

I shred the pork AKA "pulled" to remove the connective tissues that just doesn't break down and basically inedible..
After that it is used many ways. Chunks intact for a sandwich. It may be chopped for omelets
