Lol. The IR gun is showing 299.8 aimed at a pot of boiling water! You can't check boiling water with an IR gun because it senses the condensing water vapor coming out of the pot and is much lower of a temp. It should be in the directions. Also, that stainless steel pot won't give a correct reading from emissivity. Shiny stuff needs a piece of duct tape or similar stuck to the outside to aim at to get the correct temp which also should be in the directions. Funny Inkbird Co.

I would think that a piece of duct tape on a pot hot enough to boil water, would make a heck of a mess with melting tape mastic.

Anything shiny needs something thin to get a good reading. So if it was the hot pot that the temp was needed from, then a band of paper around the pot.
