Bought a two pack of 3" thick Rub Eye Steaks at Costco, each was just over 2.5 pounds. I rubbed them with EVOO, Montreal Steak Seasoning, dried minced onion and minced garlic.


I put them into the smoker at 225 with 75% Jack Daniels Oak and 25% cherry.


I smoked them for just under 2 hours and pulled them at 125 degrees to rest in a very cool grill (for 10 minutes). I continued to watch the temp to make sure they didn't go over 130. 



After about 10 minutes, I pulled each of them and seared them at about 600 degrees on my searing burner.


Off the grill, rested a short time, then sliced.



Glazed them with a light bourbon marinad, added gorgonzola crumbles and onion straws (tried to kinda copy "Steak Bourbonzola" sold at the Rockbottom Brewery) and served with rice.  Tasted great!

Mmm, those look outstanding! I'm gonna do a couple of RS rib eyes myself this afternoon.

Outstanding? I have started to use the reverse sear more and more if late myself.
