Which part of the 3-2-1 gets altered to allow the ribs to have some pull on the bone. I love this method but want to be able to pick them up with the meat not falling off

Ill try that method next time. They look awesome.I dont use the 3-2-1 method. Never worked for me at all. I ruined 6 racks of ribs trying them that way before I got ribs to come out right.
I just follow this.

Only deviation is take the membrane off, rinse the ribs off and then I rub my ribs down with kosher salt and cover in saran wrap or Press N Seal on a cookie sheet and let them marinate in the fridge for 24 hours. This recipe is FOOL proof. Smoke till they do the bend test.
