Whole the mess is out, you may as well make all you need for a while

Thanks Todd! I'm still figuring out what I like best before I make a large batch. Since I do everything by myself I couldn't get through 40 or 50 lbs (especially juggling other responsibilities) while making several different types without staying up all night. Once I figure out what I really like the most I will make a large batch of just 2 or 3 types & get them knocked out some evening

& here it is right out of the smoker. I gave it an 8 hour cold smoke & it is smelling mighty good 

I LOVE Linguica so I'm gonna have to try this. May I ask what kind of wood you used for the cold smoke?

I used oak with a little hickory added.

It was great! I have made it since then following the same recipe & am almost out of it again so it looks like it will soon be time for another batch
