That's awesome..I'm pretty sure you need my address too.  Besides adding cheese and extra's did you use a pre-mix of seasoning? If so, which one? I'm trying to see what the general favorite is around SMF for SS seasonings before I just start buying and experimenting.

I bet your neighborhood was drooling! You're that guy that makes the neighborhood smell amazing!!

Great looking SS...looks very moist! I'm with Todd - now I feel inadequate!!! You don't poach it do you? I just made 5 lbs a few days ago and sliced some yesterday, it's dry this time.

Normally I do cold smoke it and then poach it. Because of this year's volume, that seemed like an insane task. Especially knowing that I can easily keep the warming box in the 160 - 170 F range. However, when we built the smoker, I never thought to probe the warming box for hot spots. I now know where they are and we have about a dozen chubs that are going to be for our private enjoyment. :biggrin:

I agree Joel, When not If! I keep putting it off because I know once it starts there is no looking back! But it's getting close, you guys just keep pushing me and I'm going to go off the edge very soon!
