Did my ribs in the mes. Took off the membrane. Patted them dry. Covered them in my basic rub. Got the mes sitting at 225 After a warm up. Fired up my amznp with a plethora of pellets. Did two initial hours bare then foil and apple juice for two then the one uncovered. Ribs came out hands down best I've eaten. And not to soft not fall off the bone like I was worried about.
