I’m new to the forum, I figured I’d show a little bit of my last cook. Last weekend I got sucked down a rabbit hole of YouTube videos. I started out learning about IVS, then a video popped up about how to make the best ribs. I had to stay tuned. Normally my ribs turn out pretty well but I know there is always more to learn.
I pulled the membrane off, mustard and seasoned both sides, I let the ribs sit for about 20 min while my bge got to clean and stable at 275. I put the ribs on for about 2 hours, when I touched them, no rub came off into my finger (that’s what the video I watched said was the right time to wrap them). In the foil I put brown sugar, butter, honey, real maple syrup and a little more seasoning. I left them on a little longer than I meant to (dang lawnmower ran out of gas so I had to make a run to the gas station). I unwrapped them, they probed at 212. I mixed a ketchup and a mustard based bbq sauce together, then took the heaven that was in the foil and mixed it in to the sauce, then basted the ribs, put them back on the grill for about 15 min. I am going to continue making them like that from now on. I was also making some New York strips and zucchini that turned out great as well.
