Been a long time since I've smoked anything. Work has been ultra busy since I got back from Israel. But since it's a special occasion.

The first butt will be Cuban style.



Mixed up the Mojo in a jar. Here's the recipe. Going to do it in the oven at 250º for about 10 hours.

1 (7 lb) pork butt
10 cloves garlic, minced
2 cups sour orange juice
Juice of 1 lime

2 teaspoon oregano
1 TBS cumin
2 teaspoons black pepper
2 teaspoons kosher salt
2 TBS dried onions


Put in one of Lisa's bags to marinate for 3 days.


Making the rub for the Carolina style pulled pork. 14 pounds.



Spun it in the mini Cuisinart for about 30 seconds/


1 cup brown sugar
3 Tablespoons paprika
2 teaspoons ground black pepper
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons mustard powder
1 Tablespoon ground cumin
¼ teaspoon cinnamon
1 teaspoon chili powder
½ teaspoon ginger
2 teaspoons kosher salt
1 teaspoon Oregano
1 teaspoon celery seed






All rubbed and ready for the overnight rest.

WOW!!! That's a lot of pulled pork. Looking mighty fine too!! Going to have to "borrow" both your recipes. Can't wait to see the rest of the pics.

5:30 AM. Time to heat up the oven and build the fire.

Topped the Cuban pork with some thin sliced onions.


Covered and put in a 240 oven. In 12 hours I will pull it out.


Butts sitting out waiting for the pit to heat up.


250º. Ready to go. It's 6:30 AM now.



Be back in a while.

Here they are at 165º. Stall time. Sat at this temp for 2 1/2 hours.


The TBS. So thin you can't hardly see it.


Done. Pulled it out when it hit 200º.


First time I had them done before the crowd showed up. Double foiled and wrapped in towels and into the cooler until the action starts.


The Cuban roasted pork is out of the oven. Smells heavenly.



Nice clean bone slid right out.


Hickory smoked pulled pork. Came out really awesome.


My plate. Started eating then remembered I should take a pic.

Nice spread for the kids Scott......  Looks good to me....  Nice to see kids eating  "real" healthy food....
