I need to do 2 turkeys on a 22.5" WSM - what is the best way?  Cram them both on to the top rack or do 1 on the top rack and 1 on the water-pan rack?  If I cram them both on the top, surely it will restrict the air- and smoke-flow around them?  Or is this not a problem?

Last question - should I put the birds in a foil tray or directly on to the rack??

If they are small enough to be on 1 rack without being smashed together then do that if not use 2 different racks.

I don't use a tray under mine but I am not looking to save the drippings.

You need 2" space all around the those birds or any meat for that matter...JJ

I'd do one on bottom and one on top, then swap them top to bottom and bottom to top 1/2 thru the cook.  If you wanna save the dripping you could put one or both in a roasting rack positioned in a foil pan.  That would also keep the top bird from dripping onto the lower bird.
