I put a 7lb Pork Shoulder on the GMG pellet grill at 12:30AM. It has been on the smoker for almost 15 hours at this point. It stalled around 155* for a few hours but it is now stalled again at 185* for the past 2.5 - 3 hours. Is that normal?

I was smoking at 225* but have increased the temp to 240* due to the need to serve in 1.5 hours.

I think you’re just cooking at too low a temp. I do mine at 250 to 280 (That just seems where my smoker is comfortable).
I’ve never figured out where the 225 cooking temp idea came from.
Maybe it’s just me...

Every piece of meat cooks differently, but like smokeymose I run my pit at 270-280 for a butt.
You really won't get any stall at those temps & it gets done sooner & is just as tender & juicy as cooking it at 225.
