Sunday Funday..... An early start to the day courtesy of a 4am dog vs. skunk battle in the back field. Hint: the skunk won...

Anyways, on to the important stuff.

Today's competitors for the TBS crown:

Getting the coal rolling:

Today's victims St. Louis spares and beef short ribs:

Prep work... trimmed and membranes off:

Halved the racks to fit in the WSM :

Now into the 3-way.... one rack of spares with Arthur Bryant dry rub:

Part 2 of the 3-way... Spares with Pig's Ass Rub:

Coals are rolling, everyone one in the pool:

Prepping the thermo:

Hmmm.... try in your favorite bloody Mary recipe? Well... who am I to argue with a BBQ legend like Arthur Bryant:

I guess his current digs got a little too warm, because this guy was evicted as the smoker came up to temp:

Now for the 3rd leg of the 3-way... beef short ribs:

Removing the membrane:

Now time for some love...

Watching the pit temp (and the chef's BAC rise...)

Smoke so thin the camera couldn't even see it:

Good night ribs... see you in a few hours...

The pigs are a little crowded. Time for a bigger pit:

Shorties on the bottom rack, crowded in there:

Everything is going no wrap today... see you back in 6 or 7 hours.

Should be tasty. I like doing beef and pork ribs. I don't foil pork ribs. But I do feel the need ribs benefit from the braise so I foil them.

Tim sorry to say they look like they should have been wrapped, and sent to me for approval

Nice job

Richie
