This is my first attempt at smoking... I am using my trusty Weber Kettle with the Smokenator 1000. I bought 4 racks of Pork ribs yesterday and a beef chuck roast. I rubbed them down last night with Jeff's rub and re-rubbed them this morning before putting them on the grill. I am using Wicked Good briquettes on top of Wicked Good lump, also hickory chunks and alder chips. It has been about 2 and a half hours since I started and all is well!! I have filled the water tray up with Sam Adams Cream Stout a couple of times and it seems to be working well. I have 1 before shot and the last one is 2 1/2 hours into it... don't know if I can wait much longer!!!
