I was going to do a Brisket today for some guests but since this is only my second smoke in my New smoker I didn't want to mess up that expensive of a cut. Still trying to dial her in.
I rubbed the ribs down last night with some of Jeffs rub, sorry no pic, wrapped in plastic wrap and put in fridge over night. 2.5 hours in at 230deg and I think they are looking pretty good. The pork shoulder in the pic is for a party next weekend, I'll be camping so no time to cook.

Wife didn't like all the smoke last week so I'm cutting it down a tad

So the ribs and chicken turned out perfect.. I don't think I could change a thing to make them any better. The company loved them along with roasted corn and the Sweet baked beans my wife made

Very good, Smoker

Looks awesome, especially for the first try on a new smoker.  Hahaha famous last words, "I don't think I can change a thing."  You shall see that you will love those ribs and think you have solved the mystery but then one day you will buy some ribs just for the sake of playing around with your smoker and try something new and that will be your new perfect.  And then you'll try to improve on that.  This hobby is all about the tinkering.  That's what makes it so fun!!  Great smoke!
