Bought a 10 lb bag of frozen wings at Sam’s. After attempting to thaw for 24 hrs in the fridge, they were still pretty frozen. Put them in the oven on convect bake at paltry 100 degrees, and 25 minutes later they were perfect.

Dried with paper towel, then liberally applied some Yardbird rub and a touch of Montreal Chicken seasoning.

Smoked on the pellet grill for 1hr at 200, then 45 min at 300. Spritzed occasionally with Pam cooking spray.

Overall great result. Probably the best wings I’ve ever eaten. Skin was crisp but still a bit oily. Next time I’ll dial back the Pam, maybe try a water-based spritz and give it a few minutes at 400. We’ll see.
