Well spent my dad's day afternoon making the wife some turkey sticks.
Just 1lb of ground turkey and hi mtn. mesquite mix. Stuffed into 16mm collagen casing overnight in fridge then let sit 1 hr to dry b4 smoking. Used hickory on the big chief.
Learned a couple things.
1. I had one stick that was caseless. It was the left over in the stuffer after stuffing. Rolled into stick in zip bag then carefully removed and smoked on a small perforated sheet with the rest of the sticks.
2. My smoker will reach 212 degrees in 87 degree outside temp. Blanket in winter will help hold in heat.
3. From now on I'm going to go caseless on sticks! The maker's of the big chief smoker sell a set of cooking racks for fish nuts and so on. Will work great for this and no more stuffing! Just shoot with my jerky gun!
Taste is good. Cooked until 168IT then ice bath. Not a fan of the casings. Too chewy.
Anyway. I hope the wife likes them. I prefer deer or beek sticks and jerky but she like store bought turkey.
