Hi The injection did have phosphates in it..Be fore going into the cooler I opened up the butcher paper for 10 mins, then wrapped in foil. FTC? Started probing started at 200*
This brisket was about 10-12I did, all come out the same tender/tasty but no the dry side.

Was it tender when you first probed at 200*, or did it need to go longer? I start checking at 190*, as I've had briskets that finished at 193* several times.

I've done hot n fast briskets, but always wrap it in foil or a pan. Soft bark. Haven't tried one yet with butcher paper, which gives an interesting bark on TT and Pork Butts; firm, but tasty.

Usually my briskets are unwrapped overnight at 225F then I up the temp in the morning to 275-300F or higher, still unwrapped. Also haven't tried one with butcher paper, but want to.

I think one or both of my daughters might come home next weekend. One's hatching our first grandbaby and is restricting what she can and cannot eat. The other is big into Crossfit, Spartan races, etc. I'll have to see if brisket in on their diets.
 
Yes, brisket will come out dry if you overcook it. At what point did you start probing it? Also, injecting is a good way to bring other flavors, but does little to prevent it from drying out - unless you're also adding phosphate. Injection is too thin and most of it will run out when the meat starts contracting.

Brisket it not going to be juicy like a medium-rare steak. It should be moist and succulent - and that comes from the melted fat and connective tissue. If you overcook it, you will lose that. Also remember that if you cook it perfectly, and then FTC without letting it cool down a bit, it will continue cooking in the cooler.
Hi The injection did have phosphates in it. I can't seem to get it like the ones I see on TV where the juices are running out of it like crazy.I will keep trying.
