1st Ever Chuck Roast Smoke

Well, after reading multiple chuckie posts I finally decided to give it a try myself. Thawed out the one I had in the freezer and seasoned it up with salt, pepper, white pepper, garlic powder and chili powder.

Seasoned up and ready to go.

Just kept it simple and didn't inject. Smoked with charcoal as the main heat source and hickory chunks for flavor. Stalled pretty good about 4 hrs in at the 150 mark so I decided to wrap added in some butter and just a little water...pic just before wrap.

About 90 minutes later I pulled at 185.

After a nice 30 minute rest I sliced up a bit and this was the result.

Now that I have got one under my belt I might branch out and try a different flavor profile\injecting next time.

Thanks! I was pretty happy for the first time but will look to improve for next time. It came out with great smoke flavor but I probably should have seasoned a little heavier or added some more of the spices when I wrapped.
 
That's one great looking Chuckie, Brett! You should feel fantastic about your result. Chuckies can be more temperamental than briskets on the smoker, but you tamed the beast!
 
I've done a few chuckies in my day and yours looks perfect Brett. I like smoking chuckies for pulled beef, but may have to reconsider that thought process.

Thanks for comments. I was a bit worried after it stalled out for a bit but doing the old wrap sure helped.

Thanks cornman. I hadn't had chuck roast for many years and that is actually the first one I have made for myself by any method. It is something I will definitely have to do again.

I've never tried a chuck roast, but after seeing how yours turned out, I think I will. Yours looks REAL good. Great job.

You weren't to far off. It should pull/shred at about 200 to 210*.
