Here she is, all done. Thanks to all of you here and the help i had from others at home. I had to depend on others to help since my back injury but it was worth it. Sort of makes you humble when you are used to doing most of the work yourself and you need help. Thanks again to all.
We had its first smoke a fatty than it was big time. We did a 22 hour smoke 2 pork butts and a brisket. The mailbox mod with the amnsps work perfectly TBS the whole time. The 3000 watt
Oven element with the pid worked perfectly.

Thank you. The top pid does the heating. The other one is a timer. The smaller ones are just used for temperture gauges for each rack. I thought it would be nice to keep it all digital looking.
 
I never really thought about cold smoking ideas i kmow the smoker coild do it with the smoke box outside and the use of the heating element. Just dont know what i could smoke? I will have to look at the forums
 
I'm considering an exterior smoke box on my build I am currently doing.  That mailbox idea is pretty cool.
