Sans Egal slim jims stuffed into 15mm collagen. You need to use a 3/8" OD stuffing tube for these small casings.

Great looking sticks there Rick. I keep thinking I want to buy some more of the 15mm or 17mm casings for sticks. Nothing wrong with the 21mm, but you stick supply goes a lot further with the smaller casings and it's more like the true "slim jim" size.

But that 9mm/3/8" (outer diameter) tube is a must with those.
 
I would be curious exactly how Slim Jim's are made. Not the recipe as I'm sure it is a trade secret, but they must be doing something totally different in the way they are physically made. The meat has like a longer fiber texture and then there is the "juice" (for lack of a better description). I've made versions that were close in taste, but never have I seen anyone duplicate that texture (long fiber) or the "juice". On the other hand we are not packaging ours individually in wrappers and expecting them to be shelf stable for a year and a half.
