This 4 pound chuck roast took 11 hours to get to 203 internal.
Worth the wait.....

Excellent. Mine didn't take anywhere near 11 hrs, but it tasted darn good. Yours looks a little more juicy though..I'm jealous.

That looks really good, 11 hours sure was a long wait, but hey, low and slow is the name of the game, low, slow and the dreaded plateau.

Thats one good loking chuck there. I just finished one last night but it didnt that 11 hours it took about 8 hours but tasted really good and very juicey. Is that celonthro chop up in there ?
 
I like to get my get the chuck roast up to 200ish so I can pull it.
And yes - that is cilantro - a friend of mine only puts citantro and onions on his tacos so I thought I'd try the extra cilantro but I also made some fresh pico and guacamole, then added the extra cilantro for good measure. I will be doing that again.

Well alittle shallow on the depth of field, but otherwise the photos are great and the Chuck too. f 2.8 just can't cut it, but otherwise that Nikon did a great job.
 
Had a tough time deciding what looked better, the food or the pics ... Loved both of them!!!
