Hi, I'm from Colorado, new to smoking, but avid griller for nearly 15 years. Here is the UDS I just finished building in action...

So far we have done a pork shoulder, chicken thighs, a brisket, and a butterfly. (Don't know how it got in there, but it was tasty!)

Looking to learn, share, and find some awesome recipies!

Thanks for the welcome. The chicken turned out ok, a little salty for my taste, stared the smoker about 4 hours too late, so the chicken was in the brine for about 6 hours. Also had trouble getting the crispy bite through skin.

    Oh well, next time!

Putting together some stuffed and smoked burgers this week!
