Shoulder and slaw for sons 2nd birthday party tomorrow.

Rubbed in paprika, salt, pepper, brown and white sugar, thyme, celery salt and garlic powder.

Going on the mini when I feel like it. No later than 2 am.

Cooking at 230ish. The fun part is the thunderstorm rolling through...

Plenty of beer to help last.
 
How long you figure it will take at 230?

I do mine at 275
 
Gotta love a nice big hunk of pig in the Mini! Gonna be good! Can't wait to see the end of the Smoke!
 
I am figuring 13 to 14 hours with a 2 hour rest. That puts me at 5pm with an hr wiggle. I am putting on in about 20 min. Fire is lit getting to temp as I write.
 
You might want to bump the pit temp up a bit. The last picnic I did in the mini, 9 pounds, running @ 265 took 14 hours. The one before that also 9 pounds running @ 250 took 18 hours. Both cooked to an IT of 205.

Another thing depending on your diffuser with that much fat watch for flair ups.
 
I noticed the bag of Royal Oak Charcoal. Have you had good luck with it? I found what looked like a piece of insulation and a small piece of hardwood flooring in a bag I opened recently
 
I have been using it the last year or so. I don't have anything bad to say about it.
 
Nothing against Royal Oak  I too have used it for years.  I was loading my BGE and noticed weird stuff in it. Then I screwed up and watched a "How it's Made Video" on making charcoal and while watching the video you can see pieces of flooring sliding down the chute to be processed.

They also have one on pellets and you can see pieces of "Tongue and Groove Flooring" going through the processor.

I have been thinking about cutting down two Apple Trees in my yard maybe it's time :-}
 
I know that many of the charcoal and pellet companies purchase off cuts from mills that manufacture other hard wood products.
