Brined overnight,skinned except wing,lemon pepper and paprika over pecan.2hrs took to 175°

Nope,but juicy as all get out after the brine soak it had.It had a 25 Hr soak(sans skin) then 4 Hrs in fridge to develop a fine pellicle.The smoke sealed it like a jimmy jacket.It's an Oscar approved method :D

Edit: When I pulled the temp probe juice shot out of it...really..no pun

That's my 86 Lb "Taste Tester" Oscar or Scar.I trained him with hand signals.Though when you have food he miraculously sits pretty like that all on his own with that face on.
