    Monday Apple Smoked Pork Loin.

    Pork loin out of the fridge a little more rub then on to the smoker. After 4 hours @230* pulled at it of 145* Apple wood smoked pork loin with baked beans and corn on the cob. Very tender and juicy. Ted

    What is the best brand if sausage casings to use?

    I have been smoking meat for a very long time but I have never made link type sausage such as hot links. I have all my equipment standing by and several recipes from this site just need help choosing a good quality hog casing. I have been looking at amazon as I do have a prime account. Ted

    I hear a lot Ofcomplaints about the stock temp probe being way off on the MES. I have done several trials on my MES 40 and hear are the results against my Maverick.Pretty darn close.
