Okay, so my wife found corned beef briskets on sale for $1.99/lb. They were all small, 3 to 3 1/2 #, but hey, they were cheap!
We rinsed them and vac-packed for the freezer. Kept 1 out for smoking on Sunday, along with a rack of Baby Backs we had thawed out.
Got the idea of Sriracha from AuburnTigers90-thanks for the idea!
Wings on the left are olive oil and Jeffs rub, on right is Sriracha and Jeffs rub.
2 breasts, brined 6 hours then applied Jeffs rub.
Using my new wine barrel pellets, just got them!
Nuked enough pellets to fill one row...
Been seeing some great looking wings here lately and just had to have some!
Put the wings in a gallon baggie with EVOO, Jeffs rub, and some extra cayenne.
All shook up and into the fridge till smoke time!

Made a simple brine-salt,sugar, and a couple shakes of Jeffs rub.

Gonna be a Baby Back night! Pulled a couple racks out of the freezer a few nights ago.
Removed the membrane last night-ready for Jeffs rub.
All rubbed up. Wrapped each one in plastic wrap.
Wrapped them together in HD foil and into the fridge overnight.
Into my little MES at 260*. Had...
Now that I've got your attention- I thought it would be fun to see all the cool smokers out there.Might be fun for new people especially to see the great variety. So why don't we show what we got? Nothing is too big or too small to show off, they're all cool-I have a MES 30 and love it! So post...
Hello all, I'm smoking my first picnic ( actually a picnic half ) this weekend. I researched here and have seen some done with skin on and some with it off. They both look good. Would love to hear some opinions on this. Will be doing it in my MES 30. Thanks, David.
OK, the first photo here is the final product, obviously I'm doing something wrong. they turned out great tender and moist with crisp prosciutto. will def do again.
OK, I love smoked legs, but even if I throw them on a hot grill after smoking, the skin just isn't right. (Maybe I'm not...
Hi everyone, just joined and wanted to say thanks for the great advice I've already gotten. Been grilling forever, but just got my MES30 a little over a year ago and I love it. No issues with it at all. I've also since aquired a dual probe Maverick, a Thermapen, and Jeffs book and recipes, all...
