Wow is that great news for me! I have had several different MES smokers and a Traeger. Never could get the smoke ring on anything no matter the combination I tried. I still enjoyed most of my "mistakes".
My boss sent me on business trip to Kansas City, told me to go to Jack Stack and get the crown prime ribs. That was 10 years ago and got me into smoking. I smoke these whenever I can ever since. Yours look amazing!
I usually just smoke for 2 of us and like it fresh so not filling up the smoker! If I filled the smoker everytime I would be stuck on 1 side of the door or the other.
I also have a lid with holes drilled in it like a shaker top. I store it on top the same jar with a screw on ring. Lots of jar lids will fit the same size canning jars and you can drill them and just screw them on over your sealed jar.
For me weekends are my smoking days. I usually mix up a batch of rub (Jeff's) that will last a few weeks. I know most of us have a vacuum sealer, so do yourself a favor and get the canning jar accessory. I mix my rub and put it in a canning jar then vacuum seal it. It stays fresh and if it does...

I have used many combinations of chips, pretzels, fried cheetos, doritos and just about every snack type thing I can find. When I get them all combined how I want I throw in some of Jeff's rub mix for a smokey bbq flavor. Always a hit at parties so make a bunch.
Looks fantastic. Chuck roast here is often less expensive than brisket. Not sure what drove the price of brisket so high other than competition to get it as tender as a good cut of meat.

I have gone as far as vacuum sealing it over night with the rub on it. It turned out great, but not sure if its any better than a rubbing an hour before. Vacuum sealing should open up the cells of the butt a little?
