    So here's something odd - these guys have only been on about an hour and I'm already getting temps over 180 on them. Does Wagyu just smoke a lot faster? This temp comes not just from the weber probe, but I also temped them with my thermapen, which I find very reliable. Here's how they look now!

    Love LOVE how the wings and thighs turned out. Smoked at 225 for about an hour, then juiced the SF up to 400 degrees and got true crispy skin. Wow! It really acts like a real grill when you want it to!

    I did use the minion method, and used a full chimney of coals to get it going. It is now holding around 240 or so, which is just fine. I think it may have needed more coals to get going.
