New traeger.... Need a Lil info...

So my wife gave me a new smoker after my last stick burner rusted into a heap and she had it hauled away..... This a traeger 572 and my first experience with pellet smokers. After the initial burn in. I started a couple butts on 225. I watched the temps oscillate from 175-305. After 3 hours...

Meat from Food Lion (If you have one near you)

So I took the little one out this morning to do our grocery run. Food Lion had $1.49 pork butts so that was my first stop(they were .99 last year, but that is as cheap as I've seen em this year). I'm outta Q so it is time to smoke something. Then I hit lowes foods cause that's the only place in...

    Educate me on brisket

I've smoked those little flats, and done pastrami outta the cured ones. Ya'll know I like to live on the cheap side so I picked up a 10 pound one today(about 2.50 a pound(just select grade)). So educate me on what I bought. Is this a packer brisket? If nothing else i'll grind the whole thing for...

been sawing wood for a couple days

Brought down a huge oak in the front yard.  I know all the Q joints back home smoked with oak.  This is a laurel oak, is it suitable to smoke with or just campfire wood? Many thanks Rick

    jerky from Walmart?

It's too cold to smoke anything, but I did see they had all the hunting items on clearance at walmart (while looking for ammo) and that included the jerky seasonings.  Are any of these worth trying?  I rarely try these kind of things, so i'm curious.  Anyone have experience with this? Rick

    Cabbage and Tomato Casserole

Since it's mater season and most of us have more than we need right now it's a good time to put this up. This is an old "country" recipe given to me many, many years ago. I make it as a side dish several times during a season. The fine lady who gave me the recipe leaves out the olives so I do...

I have fillets off of four fish and thinking about smoking them.  I've never smoked any fish before.  Should have prolly left the head and skin on if I was going to smoke, but too late for that.  Fish were 16-18".  From what i've read I should brine, let pellicle form in fridge, then smoke. ...

Any good bbq on route 74?

Leaving soon from the coast and traveling 74 from here(holden beach) to bypass around charlotte, then 321, then 40.  Any joints I need to check out along the way, have spotted barbee's BBQ near peachland and one other (big bob's BBQ maybe) but didn't know if they were worth stopping at.  Think I...

    Grilled pork loin

Giving the smoker a break and doing a loin on the grill tonight.  Gave this guy a light coating of mustard and a heavy shake of weber's chicago steak seasoning (I don't care for it on beef, but it works great on pork).  Got a little color on the fat side then up on top to cook over low heat...

New smoker from the coast of NC

Hey guys      Rick here, from Holden Beach, NC.  Moved down from the mountains last year, was time for a change of scenery.  My better half was kind enough to find a little smoker on craigslist for me to look at.  I wasn't looking for one at the time, too busy remodeling the house.  For 15...

    First Chicken Attempt

Lazy weekend here so I threw a couple birds on to cook topped with a few slices of bacon and a slice of pineapple (thanks Phil).  Made a few japs while I was at it and a pot of Dutch's beans (thanks Dan).  I know this little cooker isn't the best, but for $15 it'll work for a while.  Still...

    Pork picnic fail....

So i'm dying for some good NC BBQ.  Haven't had any since I moved to this area of the state.  Found a cheap lil cube smoker on craigslist and broke it in yesterday(my first attempt).  Trimmed up a picnic around 8 lbs, brined for around 12 hours, dry rub for around 12 hrs, then smoked it for 8...
