    Generally it seems if you clean them out well the jalapenos mellow when smoked but there always seems to be one or two hots ones in the batch.  It's fun to watch and see who gets them :)

    i have one, it works fine, although i'm not sure it's any better than just putting the coals to one side, the water pan is small and needs refilled often.

    The night before should be fine.  I have cut/cleaned the peppers the nite before when time was an issue and it worked out.
