Well I wrapped at 156 I am on a pellet smoker, but when I put probes back in temp dropped to 146. The had 61/2 hours on the smoke and had a great color and good bark. Hope I did not wrap to early. Dang probe. 😕

Yeah did that looks to have black spec in it could be seasoning. Never looked at it that close till felt it was hard. It expires in July 28th been open for 6 months or so first smoke of the year. Use it or not?
Came home from work and went to grab my Kosmos pork injection all hard and color looks off. Any suggestions on what I can do for a last minute injection butts going on at 2 am and all the bbq shops here closed already.
Can butts stall around the 150 mark? Mine seem to have done so. They been on for 6 hrs now. Also when I wrap I normally wrap in tin foil, what do you think about putting it in a foil pan instead? Thanks

So frustrating brisket to stressful. May just stick to ribs and chicken or just do a prime flat next time. Ohhh well if it did not turn out I can always make a nice gravy, smother it and call it a day. For better or worse I will let you all know. Will be awhile going to let it sit for 7hrs
