    First Cook - Pork Butt

Thanks - it wasn't horrible.... ;) I honestly think I just had too much fuel in it 'cause I had the vents almost closed.

    First Cook - Pork Butt

Well, the first cook (and eat) is done. Did a smallish pork butt on the Vision. I think I put too much charcoal in though because I couldn't keep it at 250 and had temps of 300ish :( Just did S&P. Wanted to do a "naked" one right out of the gate and go from there. Wrapped it in foil at...

First cook tomorrow on the ceramic

There's a stone above the charcoal. There is an upper rack I can use but given I have no clue what the h*77 I'm doin', I'm thinking I'll just S&P it, get it to about 250* and toss the sucker on the grate. Wrap it in foil @ about 160* and back on, take it to 205* and then wrap it in a towel in...

First cook tomorrow on the ceramic

Will report in with pics one way or the other. ;) I figure it's gonna be a learning experience. I've had a WSM for a long time but really only did chicken and ribs and pastrami. Gonna branch out. :D

First cook tomorrow on the ceramic

I did a couple of test burns in the new Vision ceramic and the 2nd one did 250* for 10 hrs rock solid so I *think* I'm ready. ;) The boss (read as: wife) gets back from 2 weeks with 9 other women, drinking wine, men bashing, and making jewelry tonight. Anyhow.... first cook tomorrow. Small pork...

    Pastrami In SW, Florida

Lookin' good! Hope the weather's a bit nicer for ya down there. Was 53* here in Rotonda West when I got up. ALL the way up to 57* now and cloudy. I'm probably gonna get a flat and do pastrami once I figure out how to control the temp in this new ceramic beast.

They made me an offer I couldn't refuse.....

I ordered one of the unit's shown in the link, only white. It's a 2020 model and they just want rid of it. I'm getting it for $1200 WITH the gas insert which typically runs almost three hundred. DELIVERED. :D Of course now comes the learning curve of how to temp control it but it should keep...
