Take the paper (i use one sheet or two pages with the fold in the middle) and crumple into a paper ring put in chimney with an opening in the middle to let the air through. Think of it as a paper dounut.
Actually close to 3 hours in my ECB with an afterburner at 200 over apple wood, so I could get other things done around the yard, and finished on the Webber with some heat to crisp them up. Naked other than rub until the last 30 minutes. A total of roughly 4 hours.
I haven't posted anything in a while, so I kept the camera close by while doing a couple racks of baby backs this past weekend. They came out so good I didn't have any leftovers to take to lunch on Monday!

One thing to consider with deer meat is that you need to eat it right away. In other words almost as you are pulling it from the grill, it just seams to melt in your mouth when straight from the fire.
Try doing french chops (like lamb) great app for when you have a fancy dinner!
Oh and...
I guess we are still stuck in the old days here in Maine- we still play horseshoes...... Dont think I could get used to a game called "cornhole" theres a whole different meaning that comes to mind, and thats no game
I think the bear claws are great, but like I said metal ones would be even better. They are also good for moving hot food around, with the additional spikes you can lift things like a butt that is about to fall to pieces with ease.
Metal ones would be great- I actually thought these were metal until they arrived from Amazon. I purchased on a recomendation from a member on this board years ago. Could you spill the beans on which "big box" had them in metal?
