    You can wrap with foil. Add some apple juice to the wrap. This will speed up the process.

    BBQ sauce I whipped up. Well started with a basic sauce from the store and added Honey brown sugar SPOG and a lil cayenne. Heavy on the honey. Then added more of the rub and stirred it all up.

    pretty much followed Jeff's direction verbatim besides the rub. Used Weber originals, but I did make Jeff sauce. Took around 10hrs for it to hit 190 IT then cubes and smoked for another 2hrs. Myself and family loved the end result. end result

    Was probing pretty well at 190 but let run till 195. Had one part of the flat that wasn't feeling buttery. Now it's resting till dinner. Fingers crossed.

    Small piece if from trim. Rubbed it with Webber's original run to see the difference between that and SPOG on the bigger cut. Just wrapped after IT stayed at 165 for over an HR.     So I put the brisket on at 4am at around 265 and 4hrs later IT is 160 but little to no bark. Going keep uncovered until I get a better bark. Also turned temp down to 240 since IT raised hr than I wanted.

    Wrapped at IT of 165. Took around 5hrs and some change to reach. Now waiting for it to finish up. Will post finished product. Decided not to inject after the information you guys gave me.
